Vinegar Veggies
These Vinegar Veggies are a delicious and healthy side dish or main course option. The combination of white vinegar, soy sauce, garlic, ginger, and maple syrup creates a flavorful marinade that perfectly complements the assortment of colorful vegetables. Roasting the marinated veggies in the oven enhances their natural sweetness and adds a delightful caramelized touch.
Ingredients:
- 1 cup carrots, sliced
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 cup bell peppers, sliced
- 1 cup green beans, trimmed
- 1/4 cup white vinegar
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions:
In a large bowl, mix together white vinegar, soy sauce, minced garlic, minced ginger, maple syrup, sesame oil, salt, and pepper
Add sliced carrots, cauliflower florets, broccoli florets, bell peppers, and trimmed green beans to the bowl
Toss until all vegetables are evenly coated with the marinade
Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or overnight for best flavor
Preheat oven to 400F 200C
Spread marinated vegetables onto a baking sheet lined with parchment paper
Bake in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through
Serve hot as a side dish or over cooked rice or noodles
