Apple Walnut Salad
When you're eating your creamy Roasted Butternut Squash-Apple Soup, this Apple Walnut Salad goes really well with it. Crisp apples, toasted walnuts, creamy goat cheese, and a tangy balsamic vinaigrette go very well together.
Ingredients:
- 2 cups mixed greens
- 1 apple, thinly sliced
- 1/2 cup walnuts, toasted
- 1/4 cup crumbled goat cheese
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
In a large bowl, combine the mixed greens, sliced apple, toasted walnuts, and crumbled goat cheese
In a small bowl, whisk together the balsamic vinegar and olive oil to make the dressing
Drizzle the dressing over the salad and toss to combine
