Vegan Sweet Potato Gnocchi - Rabbit and Wolves



These Vegan Sweet Potato Gnocchi are pillowy soft, slightly sweet, and incredibly delicious. They are made with simple ingredients and come together in no time. Perfect for a cozy dinner or a special occasion!

Ingredients:

  • 2 large sweet potatoes, baked and peeled
  • 2 cups all-purpose flour
  • Salt, to taste
  • 1/4 tsp nutmeg
  • 2 tbsp olive oil
  • Marinara sauce, for serving
  • Fresh basil, for garnish

Instructions:

Mash the sweet potatoes in a big bowl until they are smooth

Mix the sweet potatoes with flour, salt, and nutmeg until a dough forms

On a floured surface, cut the dough into small pieces and roll each piece into a long rope

Put the 1-inch pieces of rope on a baking sheet that has been dusted with flour

As the water boils, add salt to a large pot

Slowly add the gnocchi to the boiling water

Cook for two to three minutes, or until they float to the top

With a slotted spoon, take the gnocchi out of the pot and put them on a plate

Set a pan on medium heat and add the olive oil

Put the cooked gnocchi in the pan and cook for about two to three minutes, until each side has a light brown color

Add fresh basil on top of the gnocchi and serve with marinara sauce
