Vegan Blueberry Vanilla Jam



This vegan blueberry vanilla jam tastes great, with lots of fruity flavor and a touch of warmth from the vanilla. It tastes great on toast, muffins, and as a topping for desserts.

Ingredients:

  • 6 cups fresh blueberries
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 2 teaspoons vanilla extract

Instructions:

Over medium-low heat, mix blueberries, sugar, and lemon juice in a large saucepan

Stir the mixture every so often until the sugar is gone and it starts to boil

Turn down the heat and let the mixture simmer for 20 to 25 minutes, stirring every now and then, until it gets thick

Now take it off the heat and mix in the vanilla extract

Carefully pour the hot jam into clean jars using a canning funnel, leaving about 1/4 inch of headspace

Use a clean, damp cloth to wipe the rims of the jars

Then, put the lids on the jars and screw on the bands until they are fingertip tight

Can the jars for 10 minutes in a pot of boiling water

Take the jars out of the canner and place them on a towel-lined counter to cool completely

After 24 hours, check the seals

If the lids are on tight, keep them in a cool, dark place for up to a year

If any of the jars haven't been sealed, put them in the fridge and eat them within a few weeks
