Fleur de Sel Caramel Ice Cream



Enjoy the rich and creamy flavor of fleur de sel caramel ice cream that you made yourself. This recipe makes a delicious frozen treat with just the right amount of sweet caramel and saltiness.

Ingredients:

  • 1 cup sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 teaspoon fleur de sel
  • 5 large egg yolks

Instructions:

In a heavy-bottomed saucepan, melt the sugar over medium heat until it turns amber in color

Carefully pour in the heavy cream and whisk until smooth

Add the milk and fleur de sel, stirring until combined

In a separate bowl, whisk the egg yolks

Slowly pour the warm caramel mixture into the egg yolks, whisking constantly to prevent curdling

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon

Strain the mixture through a fine-mesh sieve into a clean bowl

Chill the mixture in the refrigerator for at least 4 hours or overnight

Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions

Transfer the churned ice cream to a container and freeze until firm
