Instant Pot Beef Stew
This hearty beef stew was made in an Instant Pot, which made the meat and vegetables very tender and flavorful.
Ingredients:

- 5 lbs beef stew meat, cubed
- 3 cups beef broth
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 2 tablespoons all-purpose flour
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Season beef stew meat with salt and pepper
In a small bowl, mix flour and tomato paste until well combined
Turn on Instant Pot to saut mode, add a bit of oil, and brown the beef cubes in batches
Remove and set aside
Add onions and garlic to the Instant Pot, saut until fragrant
Add beef broth, scraping the bottom to deglaze
Stir in tomato paste mixture, Worcestershire sauce, thyme, and rosemary
Add beef back into the pot along with carrots and potatoes
Close the lid, set to sealing, and cook on high pressure for 35 minutes
Once done, let the pressure naturally release for 10 minutes, then quick-release any remaining pressure
Adjust seasoning if needed and serve hot
