Cinnamon Roll Pancakes



Cinnamon Roll Pancakes are a tasty change from regular pancakes. They taste just like cinnamon rolls because they have a cinnamon swirl and a creamy cream cheese glaze. This is a great treat for breakfast!

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For Cinnamon Swirl:
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • For Cream Cheese Glaze:
  • 4 tablespoons cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions:

In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt

In another bowl, whisk together buttermilk, milk, egg, melted butter, and vanilla extract

Pour the wet ingredients into the dry ingredients and mix until just combined

Do not overmix; lumps are okay

For the cinnamon swirl, in a separate bowl, mix together melted butter, brown sugar, and ground cinnamon until well combined

Heat a skillet or griddle over medium heat and lightly grease it with butter or oil

Pour a small amount of pancake batter onto the skillet, then drizzle a tablespoon of the cinnamon swirl mixture on top

Swirl the cinnamon mixture into the pancake with a toothpick or skewer to create a marbled effect

Cook until bubbles form on the surface, then flip the pancake and cook until golden brown on both sides

For the cream cheese glaze, beat together softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy

Drizzle the cream cheese glaze over the cinnamon roll pancakes before serving
