Thai Vegan Fried Rice
This vegan fried rice recipe is quick and easy, and it tastes like Thailand. There are lots of different colored vegetables and fragrant spices in this quick and healthy meal that you can make in 15 minutes. Plus, it's gluten-free and can be frozen to save time on meal prep!
Ingredients:
- 3 cups cooked jasmine rice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 cup mixed vegetables such as bell peppers, peas, carrots
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped cashews or peanuts optional
Instructions:
In a small bowl, mix soy sauce and sesame oil
Set aside
Heat vegetable oil in a large skillet over medium-high heat
Add onion, garlic, and ginger
Cook until fragrant, about 2 minutes
Add mixed vegetables to the skillet and cook until tender, about 5 minutes
Add cooked rice to the skillet and stir to combine
Pour the soy sauce and sesame oil mixture over the rice
Stir well to coat evenly
Cook for another 3-4 minutes, stirring occasionally
Remove from heat and stir in chopped cilantro, green onions, and chopped nuts if using
Serve hot, garnished with extra green onions and cilantro if desired
